Ingredients

  • 2¾ cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp fine salt
  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Whisk flour, baking powder, and salt.
  2. Cream butter and sugar (2–3 minutes). Beat in egg and vanilla.
  3. Mix in dry ingredients on low just until combined. Divide the dough; wrap it and chill for 1 hour.
  4. Roll to ¼-inch thickness. Cut rounds with cookie cutters; transfer to a lined sheet.
  5. Chill the trays for 10 minutes, then bake at 350°F for 10–11 minutes, or until the edges are set. Cool completely before icing.
